As you can see I have a glut of Apples and I'm cooking and baking with them constantly right now. These Apple Crisp Breakfast Muffins are sweet but a lot of the sweetness comes from the fruit and not sugar. Having said that the crispy topping is not so healthy but I imagine that these muffins will be eaten on the weekend when everyone deserves a treat.
Breakfast on the weekend can be an occasion. If you have guests staying or you just want to treat the people you live with, waking up to a planned breakfast on a Saturday morning can be a lovely thing.
These particular muffins are all about the smell they create while they are baking. Seriously, when I made these the smell went right up the stairs and filled the house.
It's cosy.

Apple Crisp Breakfast Muffins
- Prep Time: 20 minutes
- Cook Time: 30 minutes
- Total Time: 50 minutes
- Yield: 6 muffins 1x
- Category: Dessert
Ingredients
For The Muffins
- 2 large Cooking Apples
- 250 g Plain Flour
- 50 g Soft Dark Brown Sugar
- 1 Pinch Salt
- ½ tsp Ground Ginger ((Heaped))
- ½ tsp Ground Cinnamon ((Heaped) )
- 2 tsp Baking Powder
- 1 Large Egg ((Beaten))
- 100 g Butter ((Unsalted, Cut In To Cubes))
- 200 ml Milk ((Semi-Skimmed))
Topping
- 1 tbsp Plain Flour ((Heaped))
- 1 tbsp Jumbo Oats ((Heaped) )
- 1 tbsp Soft Dark Brown Sugar ((Heaped))
- 50 g Unsalted Butter
- ½ tsp Ground Cinnamon
- 50 g Pecans ((Chopped))
Instructions
To Make The Muffins
- Pre-heat the oven to 180c
- Peel and cut both of the apples in to small pieces. Set aside.
- Mix the flour, sugar, baking powder, salt, cinnamon and ginger together.
- Mix in the butter to create a crumble
- Add the beaten egg and mix in together
- Add the milk and mix in together
- Fold the chopped apple in gently so as not to crush the apple pieces
- Grease a large muffin tin/mold and spoon the mixture in to the tin dividing equally
To Make The Topping
- Crumble together the flour, oats, sugar, butter and cinnamon and then mix in the chopped pecans
- Sprinkle the topping over the top of each filled muffin case
- Bake in the oven for approx thirty mins or until a knife comes out clean
- Wait ten mins before removing the muffins from the tin

Cherry, these muffins look simply divine! Do you have a chart that converts grams into cups and oven temps into degrees? I googled how many grams equals a cup, but there were several different answers depending on what type of food... please help this confused American make your wonderful muffins! Thanks!

I found a converter, and these are quantities I'm going to use:
250g of flour = 2.5 cups
50g of brown sugar = 1/4 cup
100g of butter = 1/2 cup
200ml milk = 7 ozs.
180C = 356F
I think the conversions look right, but if someone else who is more familiar with English to US conversions has better information, please let us know. 🙂

Although I said earlier that I have not met any “cosy” people in my life time, I should have mentioned that my hubby and myself met someone about 30 years ago who has become our ultimate best friend- He is absolutely amazing, he’s funny, kind, thoughtful, compassionate and he certainly wraps us up in love! We are oh so grateful to have met him as we have never found anyone else quite like him, he is absolutely unique and we absolutely thank God for him!
He was with us when we had some terrible things happened to us some years ago, (done to us by some really cold-hearted and selfish people). He helped us through the terrible experience; he never left our side for one second.

Dear Cherry, there are apples dropping into the chickens yard-huge 60"x30"-they are spoiled (chickens not apples) and they love them! Also the milk bottles remind me of my first experience with Blue Tits. Our neighbors had arranged for the milk float to deliver our first silver top bottles. We were 1 of 2 American families living in Byfield near Banbury. The next morning all the tops of the bottles had been punctured and the cream gone! I was so upset, thinking someone didn't like us USAers. But our darling friends explained it was the Blue Tits being rascals! We used a brick after that, the driver placed it on the bottles, no more vandals!

Hi Cherry. I was going to add as others have that cosy is the feeling I get when reading your blog which is the reason I find it hard to drag myself away from here.
I think this is another lovely apple recipe. I was hoping for a quiet weekend after last weeks party for my little boy (racing car cake came out really well by the way and party was great fun). So I've decided to have a baking weekend and they're all your recipes, Banana Bread, Jam cookies, Apple Bread and now the above recipe. Also want to cook the slow roast lamb as having a couple of r
friends around tomorrow night. Not sure if I'll manage it all but you never know.
Also the storage idea earier in the week was great as cake cases are usually squashed and lost in the back of the cupboard or fall on me as soon as I open the door. If you have anymore fab storage ideas like this please let us know as I'm sure there are others on here who like me desperately need to sort they're houses out.

Hi Cherry - these look great. I made the apple bread last weekend. As I don't have apple trees in my garden, I bought 2 large cookers, which I have come to realise were obviously MUCH bigger than the 2 large cookers I might have gathered from a tree in the garden. There was A LOT of apple and I threw it all in rather gung-ho. Husband sniffed it out before it was even in the oven, and it tasted great, but fell apart quite a bit when I sliced it as there was so much fruit. Still, i'm not deterred, i'll just use less next time.
My Mum's house is cosy - just because it's where I grew up - no other reason. I really hope one day if I have kids, they'll feel like that about where we live. I also finds walks in the forest very cosy at this time of year - all the rustling leaves and being wrapped up in the first few wears of a woolly jumper.

mmm. scrummy. I could do with one of those right now. Where did you get the vintage style straws? I've been looking for some but have had no luck.
Did you get my tweet re the lights? Mine arrived today, and I am slightly disappointed. The lights are fine, but a bit too clunky for the bays, and the wire - far too thick! I have no chance of trailing them under the door the way I normally do, the door won't shut! So, off to Dunelm-mill this weekend for me, they have some with thinner wire. I can find another home for the new ones, probably indoors.
